Baked Beef

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Clean the meat and place it in a pan with the fat and skin side up.

  2. Preheat the oven to 400°F (200°C).

  3. Once the oven is hot, place the pan inside and begin basting with the fat.

  4. Baste often during baking, closing the oven door quickly after each basting.

  5. When nearly done, sprinkle with pepper and coarse sea salt, then baste again.

  6. Serve the meat on a warm platter.

  7. If the beef is not fatty enough, add 1 tablespoon or more of stock, gravy, or beef dripping to the pan.

  8. Optionally, slice and place onions on the beef before cooking.
