Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Baked Beef Heart

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut across the base of the heart and remove the valves and tough fibrous tissue.

  2. Soak the heart in cold salt water for 2 hours, then wash it thoroughly in cold water.

Boil

  1. Put the heart into a pot of cold water to cover it, add 2 teaspoons of salt, cover, and boil for 10 minutes.

  2. Remove the scum as it rises, then take out the heart and season the cavities with pepper and salt.

Stuff and bake

  1. Stuff the heart with the mixture of bread crumbs, onion, sage, and enough fat to moisten.

  2. Secure the stuffing with cross-stitches, place it in a baking pan, and spread it with beef dripping.

  3. Sprinkle with pepper and salt, then pour in about 1 pint of boiling-hot stock or gravy.

  4. Bake in a moderate oven at 350°F (175°C) for 20 minutes per pound, basting frequently.

  5. Serve hot with gravy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef heart
Dense lean muscle that becomes tender and sliceable after long, moist cooking.
Bread crumbs
Absorb fat and juices, giving the stuffing a soft, cohesive body.
Butter, beef dripping, or lard
Adds moisture and richness, keeping the stuffing and surface from drying out.
Stock, gravy, or beef dripping
Adds moisture during baking and builds the savory gravy served with the heart.

The step that matters

Basting during the bake. Heart is lean muscle that dries out easily in dry heat. Regular basting with the pan liquid keeps the surface moist and helps the meat stay tender while it cooks through.

Swap the sage

How well each one fits the dish's main ingredients (beef, bread, onion, pepper, butter):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Sagethe original

Fit is the average pairing score against beef, bread, onion, pepper, butter. Candidates are from the same food group and used in at least 100 recipes.
