Why it works: Pepper and beef are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Fried Liver

Ingredients

Directions

Prepare the liver

  1. Cut the liver into ¼‑inch thick slices and soak in cold salt water for 1 hour.

  2. Rinse the slices well with warm water, wipe dry, and dip each slice in flour seasoned with pepper and salt.

Fry and serve

  1. Heat enough lard, beef dripping, or bacon fat in a frying pan to cover the bottom.

  2. Fry the liver slices until both sides are deep brown.

  3. Pour the remaining grease over the liver and serve, or make gravy.

Make the gravy

  1. For gravy, melt butter in the pan, add boiling water, pepper, and salt to taste.

  2. Stir in blended browned flour gradually, let it boil, then pour over the liver.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Liver
Is the main protein, cooked to a browned, firm exterior while staying tender inside.
Flour
Coats the slices so they brown in the fat and form a crisp, seasoned crust.
Blended browned flour
Thickens the gravy and adds a toasted, nutty flavour.
Butter
Adds richness and fat to the gravy, rounding its flavour.

The step that matters

Fry the liver slices until both sides are deep brown. Liver is lean and cooks quickly; overcooking toughens its proteins and dries it out, so the slices should brown well on the outside while remaining just cooked through inside.
