Why it works: Onion and beef are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,092 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Stewed Rice

Ingredients

Directions

Prepare

  1. Pick over and wash the rice carefully.

  2. In a dry pot, heat the dripping or butter.

  3. Add the minced onion and fry until light brown, stirring constantly.

Stew the rice

  1. Add the stock, rice, and seasonings to the pot.

  2. Cover and stew gently for 15 to 20 minutes, stirring frequently to prevent burning.

  3. If the stock is absorbed before the rice is tender, add more hot stock to keep it moist.

Finish

  1. If using cheese, stir in the grated cheese when the rice is done and let it heat for 1 to 2 minutes without boiling, or sprinkle it on top after serving.

What each ingredient does

Rice
Forms the bulk of the dish, absorbing stock as it stews until tender.
Stock
Supplies the liquid that the rice absorbs and that carries the flavour through the dish.
Dripping or butter
Fat that carries flavour from the onion and helps keep the rice from sticking.
Onion
Fried until light brown to add savoury sweetness and aroma to the base.
Grated cheese
Melts into the hot rice to add richness and savoury flavour when used.

The step that matters

Stewing gently with frequent stirring. Rice that stews too hard can scorch on the bottom of the pot while the grains stay unevenly cooked. Gentle heat under a lid, with regular stirring, lets the liquid absorb evenly and keeps the rice moist until tender.

Swap the onion

How well each one fits the dish's main ingredients (butter, rice, beef, pepper, cheese):

  1. Potatofits better
  2. Tomatofits about as well
  3. Capsicumfits about as well
  4. Onionthe original

Fit is the average pairing score against butter, rice, beef, pepper, cheese. Candidates are from the same food group and used in at least 100 recipes.
