Irish Stew, with Salt Beef

Ingredients

Directions

Prepare

  1. Wash the salt beef in cold water, separate it from the bone, and cut it into small pieces, about 2 ounces each.

  2. Rinse the cut salt beef again in cold water.

  3. Peel and clean the potatoes, then peel and slice the onions.

Cook

  1. In a large pot, combine the meat, potatoes, and onions.

  2. Add pepper and enough cold water to cover everything.

  3. Cover the pot and cook gently over low heat, skimming off any fat that rises to the top.

What each ingredient does

Salt beef
Provides the main meat flavour and body of the stew.
Potatoes
Break down as they cook, thickening the broth and adding starchy body.
Onions
Add sweetness and aromatic depth to the cooking liquid.

The step that matters

Skimming off the fat. Fat that rises during gentle simmering can make the stew greasy and cloudy. Removing it as it forms keeps the broth clean-tasting.

Swap the onion

How well each one fits the dish's main ingredients (beef, potato, pepper):

  1. Capsicumfits about as well
  2. Tomatofits about as well
  3. Carrotfits about as well
  4. Onionthe original
