Why it works: Potato and ginger work together. They rank in the top 12% of all ingredient pairs, and 992 recipes mention both. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Potato Yeast to Keep a Yeap

Ingredients

Directions

Prepare the hops and potatoes

  1. Peel the potatoes and tie the hops in a small bag.

  2. Boil the hops and salt in the water until the potatoes are cooked.

Make the starter

  1. Remove the potatoes, mash them finely, and mix in the sugar and flour.

  2. Pour the hop water over the mixture, ensuring the flour is lump-free.

  3. Return the mixture to the heat and boil for 5 to 10 minutes, stirring constantly to prevent scorching.

  4. Pour into a stone jar and let it cool until it is warm.

  5. Add the yeast and keep warm until raised.

  6. Stir in the ground ginger to prevent mold and store in a cool, dry place.

  7. Reserve 1 pint of the yeast for future use.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

Sugar and ginger share little aroma chemistry, yet 14,054 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Mashed starch that thickens the mixture and feeds the yeast as a food source.
Hops
Provides bitterness and aroma, and helps preserve the starter against spoilage.
Sugar
Feeds the yeast, driving fermentation and the rise of the starter.
Flour
Adds starch and body, thickening the mixture so it holds its structure.
Yeast
Ferments the sugars and starches, producing gas that makes the starter rise.

The step that matters

Stirring while boiling the potato-flour mixture. Flour settles and scorches on the base of the pan if not stirred constantly, and lumps form if the flour is not fully mixed in. Both spoil the texture and flavour of the starter.

Flavor stand-ins for the ginger

How well each one fits the dish's main ingredients (potato, sugar, hops, flour):

  1. Cinnamonbetter flavor fit
  2. Nutmegabout as good a flavor fit
  3. Jalapenoabout as good a flavor fit
  4. Gingerthe original

Fit is the average pairing score against potato, sugar, hops, flour. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
