Scalloped Tomatoes

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Scald the tomatoes and remove the skins.

  2. Butter a pudding dish and layer the bottom with tomatoes seasoned with salt and pepper.

  3. Add a layer of buttered bread on top.

  4. Repeat layering until the dish is full, finishing with a layer of tomatoes on top.

  5. Bake in a 350°F (175°C) oven for 30 minutes.

  6. Serve hot in the baking dish.
