Baked Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Butter a baking dish and line it with a thick pie crust.

  3. Parboil the chicken for a short time, depending on its age.

Layer and bake

  1. Layer the bottom of the dish with chicken pieces.

  2. Add a layer of parboiled, sliced potatoes.

  3. Season with salt, pepper, and bits of butter.

  4. Repeat layering with chicken and potatoes until all ingredients are used.

  5. Pour in the water used for boiling the chicken.

  6. Sprinkle a little flour on top.

  7. Cover with a thick pie crust and make a slit in the middle.

  8. Bake until the crust is golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and savory meat flavor that the pie is built around.
Potatoes
Add starch and body, soaking up juices to make the filling hearty.
Butter
Adds richness and flavor to the filling and helps the crust brown.
Flour
Sprinkled over the filling, it thickens the cooking liquid into a light sauce.
Rich pie crust
Forms the base and lid that enclose the filling and brown in the oven.

The step that matters

Parboil the chicken for a short time, depending on its age.. Older birds are tougher and need longer cooking, while young birds cook through quickly. Partial cooking before layering helps the chicken finish tender in the oven without drying out.

Swap the potato

How well each one fits the dish's main ingredients (chicken, pepper, butter, flour):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Leekfits about as well
  4. Spinachfits less well

Fit is the average pairing score against chicken, pepper, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
