Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Mix together chopped meat, bread crumbs, pepper, coarse sea salt, butter, and a little milk.

  2. Fill buttered gem pans with the mixture.

  3. Carefully break an egg on top of each mixture.

  4. Season with coarse sea salt and pepper.

  5. Sprinkle fine cracker crumbs on top.

  6. Bake at 400°F (200°C) for eight minutes.

  7. Serve hot.
