Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat flavor and chewy texture in the broth.
Flour
Thickens the soup as it cooks with the butter.
Butter
Carries fat for browning the flour and adds richness.
Onion
Adds aroma and savory sweetness as it softens in the broth.
Rice or sago
Releases starch that thickens the broth slightly.

The step that matters

Mix the flour with butter until light brown. Cooking the flour in fat browns it and removes its raw taste, while stirring prevents scorching. Stop once it is light brown so it thickens well without turning bitter.

Swap the celery

The recipe marks celery as optional. How well each one fits the dish's main ingredients (beef, rice, flour, butter, egg, onion, mace):

  1. Nutmegfits better
  2. Turmericfits better
  3. Cinnamonfits better
  4. Celerythe original

Fit is the average pairing score against beef, rice, flour, butter, egg, onion, mace. Candidates are from the same food group and used in at least 100 recipes.
