What each ingredient does

Mutton shoulder
Gives the broth its meaty flavour and rich body as it simmers.
Rice
Thickens the broth slightly as its starch releases during long simmering.
Turnips
Add mild sweetness and earthy flavour to the broth.
Carrots
Add natural sweetness and colour to the broth.
Onion
Adds savoury aroma and depth to the broth.

The step that matters

Skimming is not in the record; simmer gently. Keeping the broth at a gentle simmer rather than a hard boil helps it stay clear and keeps the meat tender while the collagen slowly breaks down into body.
