Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in the milk to thicken the pudding and give it a soft, set texture.
Eggs
Set during baking to add structure and richness to the custard.
Milk
Provides the liquid that the tapioca swells in and forms the body of the pudding.
Sugar
Adds sweetness and helps balance the flavor of the milk and eggs.

The step that matters

Let the tapioca swell fully before adding the eggs. Tapioca must absorb liquid and soften before the other ingredients go in. If it is not fully swollen, the pudding can stay grainy or uneven in texture after baking.

Swap the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (milk, egg, sugar, currant):

  1. Vanillafits better
  2. Raisinthe original
  3. Figfits about as well
  4. Raspberryfits about as well

Fit is the average pairing score against milk, egg, sugar, currant. Candidates are from the same food group and used in at least 100 recipes.
