Preserves and Jellies
Ingredients
Directions
Select fruit that is not fully ripe and use it as soon as possible after picking.
Place glass jars in a large pan of warm water on the back of the stove.
In a porcelain kettle, prepare the syrup by adding the fruit.
Once the jars are warm, take them out and set them on a hot dish.
Fill the jars as full as possible and set aside on a towel wet with hot water for 1-2 minutes.
Top off with hot syrup or hot water if syrup is unavailable, then seal the jars tightly.
For fruit with stones, leave a few stones in for improved flavor.
Store the jars in a dark, dry place and check them after two or three days.
