Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raspberries
Provide the main fruit flavour and colour of the shrub.
Vinegar
Adds the sharp acidity that balances the sweetness and preserves the fruit.
White sugar
Sweetens the shrub and helps preserve it once boiled.
Brandy
Adds alcohol that helps keep the finished shrub stable and adds aroma.

The step that matters

Skimming the boil. Foam that forms during boiling carries impurities and can cloud the syrup or spoil its clean flavour, so it should be skimmed off as the mixture simmers.
