What each ingredient does
- Elderberries
- Supply the juice, flavor and color that form the body of the wine.
- Sugar
- Feeds the yeast, which turns it into alcohol, and adds sweetness to the finished wine.
The step that matters
Bottle only after fermentation stops. While yeast is still converting sugar, it releases carbon dioxide. Bottling early can build pressure and cause bottles to burst, and leftover sugar can keep fermenting in the bottle.
