Spring Chicken in October

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Melt the butter or lard in a roasting pan.

  3. Season the chicken with salt and pepper, then coat it in flour.

Roast

  1. Place the chicken in the pan and almost cover it with sweet milk.

  2. Cover the pan and roast for about 1 hour or until tender.

  3. Remove the chicken and set aside.

Make the sauce

  1. Add 1 tablespoon of flour and 1 pint of milk to the same pan to make a sauce.

  2. Boil the mixture on the stove until thickened.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter or lard
Adds fat that carries flavor and helps the chicken brown in the pan.
Whole chicken
Provides the meat, which becomes tender during covered roasting in liquid.
Flour
Coats the chicken and thickens the milk into a sauce as it heats.
Sweet milk
Forms the moist cooking liquid and, once reduced, the creamy sauce.

The step that matters

Boiling the flour and milk sauce until thickened. Flour starch granules swell and thicken the liquid only when heated enough. Milk proteins and sugars can scorch on the bottom of the pan if the heat is too high.
