Mahogany Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the brown sugar and butter.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Dissolve the baking soda in the tablespoon of sweet milk and add to the mixture.

  5. In a saucepan, cook the grated chocolate in the ½ cup of sweet milk until melted.

  6. Combine the chocolate mixture with the batter and mix well.

  7. Add the flour gradually, mixing until smooth.

  8. Flavor with vanilla extract.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-35 minutes or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Adds sweetness and moisture, and with the butter gives the cake its dark colour and rich flavour.
Butter
Creams with the sugar to trap air and adds richness and tender texture.
Eggs
Add structure and help bind the batter as it sets in the oven.
Flour
Provides the structure that sets the cake as it bakes.
Baking soda
Reacts with the batter's acidity to produce gas that helps the cake rise.
Grated chocolate
Adds deep chocolate flavour and colour to the batter.

The step that matters

Dissolve the baking soda in the milk. Baking soda must be fully dissolved so it reacts evenly through the batter; undissolved pockets can leave bitter spots and uneven rising.
