Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green tomatoes
Provide the bulk of the pickle and absorb the sweet-spiced syrup as they cook.
Onions
Add savory flavor and body, softening as they cook in the brine and vinegar.
Brown sugar
Adds sweetness and helps balance the sharp acidity of the vinegar.
Vinegar
Provides the acidity that preserves the pickle and gives it its tang.
Salt
Draws water out of the tomatoes and onions, firming their texture before cooking.

The step that matters

Salting overnight. Salt draws moisture out of the vegetables through osmosis. Draining after this step matters because excess water would dilute the vinegar syrup and weaken the pickle's texture and keeping quality.

Swap the onion

How well each one fits the dish's main ingredients (tomato, vinegar, sugar, mustard, allspice, clove, cinnamon):

  1. Horseradishfits better
  2. Capsicumfits better
