Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the stiff batter that gives the fritters their structure.
Eggs
Set during frying to bind the batter and add lightness and richness.
Butter
Adds fat for richer flavour and a tender texture.

The step that matters

Let the batter cool completely. Adding eggs to hot batter can scramble them and thin the mixture, so the batter may not beat light and fluffy or hold its shape in the hot lard.

Swap the nutmeg

How well each one fits the dish's main ingredients (flour, egg, butter):

  1. Capersfits about as well
  2. Nutmegthe original
  3. Jalapenofits about as well
  4. Parsleyfits less well

Fit is the average pairing score against flour, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
