Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Provides fat and body, giving the sauce its richness and smooth texture.
Sugar
Adds sweetness and helps balance the richness of the cream.
Egg whites
Whipped, they trap air and add lightness, and they thicken as they gently warm.

The step that matters

Pouring the hot cream over the egg whites. Pour slowly while whisking. Pouring too fast or without mixing can cook the egg whites in lumps and deflate the foam, so the sauce turns grainy instead of smooth.
