Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Light Bread

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the dough

  1. In a large bowl, combine flour, dissolved yeast, salt, lard, sugar, and warm potato water.

  2. Knead the mixture well and let it rise overnight.

Shape and bake

  1. In the morning, shape the dough and let it rise again for 30 minutes before baking.

  2. If the dough is too stiff, add a little warm water to make it softer.

  3. Sift the flour before using, warming a little in cold weather for better results.

  4. Preheat the oven to 350°F (175°C) and avoid making it too hot.

What each ingredient does

Flour
Forms the gluten network that gives the bread its structure.
Yeast
Produces gas that makes the dough rise and become airy.
Potato water
Adds moisture and starch that keep the crumb soft.
Lard
Adds fat that tenderizes the crumb and softens texture.
Sugar
Feeds the yeast and adds a little sweetness and browning.

The step that matters

Adjusting the dough's stiffness. Flour absorbs liquid differently depending on its moisture and how it is sifted. A dough that is too stiff rises poorly and bakes up dense, so a little warm water helps it stay soft and extensible.

Swap the potato

How well each one fits the dish's main ingredients (flour, sugar):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
