Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  2. Mash the potatoes and place them in a bowl.

Make the dough

  1. Moisten the mashed potatoes with a little raw egg.

  2. Add loaf sugar to taste and mix well.

  3. Beat the egg whites until stiff peaks form and fold into the potato mixture.

  4. Stir in the orange flower water.

Bake and serve

  1. Shape the mixture into round or oblong biscuits on parchment paper.

  2. Bake in a slow oven at 300°F (150°C) until golden brown.

  3. Remove the biscuits from the paper once baked.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the biscuit and give a soft, tender crumb.
Egg whites
Beaten to stiff peaks, they lighten the mixture and help it hold its shape.
Raw egg
Moistens the mashed potato and helps bind the mixture together.
Loaf sugar
Adds sweetness and contributes to browning in the oven.
Orange flower water
Adds a floral aroma to the biscuits.

The step that matters

Folding in the beaten egg whites. Egg whites lose air if overmixed or deflated, so fold gently to keep the mixture light. Overmixing knocks out the air that gives the biscuits lift and a tender texture.

Swap the potato

How well each one fits the dish's main ingredients (egg, sugar, orange):

  1. Sweet potatofits better
  2. Capsicumfits better
  3. Beetrootfits better
  4. Potatothe original

Fit is the average pairing score against egg, sugar, orange. Candidates are from the same food group and used in at least 100 recipes.
