Young Broiled Chickens

Ingredients

Directions

  1. Dress the spring chickens and split them down the back.

  2. Broil the chickens without burning them, basting with butter and cream.

  3. Replace on the grill and broil a little more.

  4. The remaining basting mixture will be the gravy to pour over the chickens.

  5. Season with coarse sea salt and black pepper.

  6. When done, cut the chickens into 4 parts.

  7. Place in a dish and garnish with parsley.

  8. Serve with salad and mayonnaise dressing.
