Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Round beef
Forms the main body of the dish, becoming tender as it cooks slowly in liquid.
Flour
Coats the beef so it browns well and helps thicken the sauce.
Butter
Adds fat for browning the beef and enriches the flavour of the sauce.
Onion juice
Adds savoury onion flavour to the sauce in small amounts.

The step that matters

Brown the beef on all sides, turning often. Browning the flour-coated surface creates deep, savoury flavours through the Maillard reaction. Turning often prevents scorching and gives an even crust, so the sauce built from the pan tastes rich rather than burnt.

Swap the onion

How well each one fits the dish's main ingredients (beef, egg, butter, flour):

  1. Chivefits better
  2. Leekfits better
  3. Shallotfits better
  4. Onionthe original

Fit is the average pairing score against beef, egg, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
