French Bread
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Mix the water, yeast, coarse sea salt, and sugar as you would for plain bread.
Mold the dough into long loaves about 2 inches thick.
Place the loaves on a baking sheet, ensuring they are spaced apart.
Score the tops of the loaves with a knife.
Let the loaves rise until they double in size.
Bake in a hot oven at 400°F (200°C).
When done, wash the tops with milk and let cool without covering.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
