Jelly Roll

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare a jelly sponge cake mixture.

  2. Spread the mixture on a paper-lined baking sheet to about ¼ inch thick.

  3. Bake in a hot oven at 400°F (200°C).

  4. Once done, immediately turn the cake bottom side up on a sugar-dusted paper-covered slab or table.

  5. Remove the paper lining from the cake.

  6. Spread jelly over the cake and roll it up to form a long roll.

  7. Dust the roll with powdered sugar and cut it into desired lengths.
