Roast Goose

Ingredients

Directions

  1. Prepare the dressing as usual.

  2. Add the chopped apples and prunes to the dressing.

  3. Stuff the goose with the mixture.

  4. While baking, baste the goose often with a mixture of wine and water.

  5. For the last basting, use wine alone.

  6. Remove excess grease from the pan.

  7. Add a little wine to the drippings for gravy and thicken with flour.

  8. You can substitute currant jelly, lemon juice, and hot water for the wine if desired.
