Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Rub a little butter over each veal cutlet and season with coarse sea salt and black pepper.

  3. Place the cutlets flat in a dripping pan.

  4. Cover the pan with another pan of the same size.

Bake and make the sauce

  1. Bake in the hot oven until thoroughly cooked.

  2. Rub a small piece of butter with flour to form a soft paste. Pour in the boiling water and stir until the sauce thickens.

  3. Add the lemon juice to the sauce.

  4. Pour the sauce over the cutlets.

  5. Serve, or serve without sauce if preferred.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal cutlets
The main protein; cooking them through gives them a tender, sliceable texture.
Butter
Adds richness and moisture to the cutlets and helps the flour form a smooth paste for the sauce.
Flour
Thickens the sauce when mixed with butter and hot water.
Lemon juice
Adds acidity that brightens the flavour of the sauce.

The step that matters

Stir the flour and butter paste into the boiling water. Flour thickens only when its starch is evenly dispersed and heated in liquid. Adding the boiling water gradually while stirring prevents lumps and gives a smooth, thickened sauce.
