Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Emulsify with butter and thicken the dressing as it combines with the warm vinegar.
Butter
Adds richness and fat, giving the dressing a smoother, creamier body.
Vinegar
Provides acidity that sharpens flavor and helps set the egg yolks.
Sugar
Balances the sharpness of the vinegar with sweetness.
Cream
Adds moisture and fat, softening the texture of the dressing.

The step that matters

Pour the vinegar mixture into the egg mixture and stir well. Pouring hot vinegar into egg yolks must be done while stirring constantly so the yolks warm gradually and thicken smoothly instead of scrambling into lumps.
