Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the eggs in a bowl.

  2. Add the butter and milk to the eggs and mix well.

  3. Sift the flour and baking powder together, then add to the egg mixture.

  4. Pour the batter into greased shallow tins.

Bake and serve

  1. Cover the top thickly with huckleberries and sprinkle with sugar.

  2. Bake in a hot oven at 400°F (200°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and give the pudding its structure as it sets.
Flour
Forms the main structure of the pudding as the batter bakes.
Baking powder
Releases gas in the oven so the pudding rises and becomes light.
Butter
Adds richness and tenderness to the crumb.
Milk
Moistens the batter and helps it bake into a soft texture.
Huckleberries
Add tart fruit flavour and juiciness that bakes into the top.
