What each ingredient does
- Coffee
- Provides the main flavor, and fine grounds offer more surface for hot water to extract it.
- Water
- Hot water extracts flavor and aroma from the grounds and carries them into the drink.
The step that matters
Pouring the boiling water over the coffee. Water that is actually at a boil extracts flavor from the grounds efficiently. Cooler water pulls out less flavor, so the cup can taste weak or flat.
