What each ingredient does

Sugar
Dissolves into the syrup to provide the punch's main sweetness and body.
Lemon juice
Adds acidity that brightens the punch and balances the sweetness.
Cold tea
Adds tannins for a slightly dry, bitter edge that offsets the sugar.
Pineapple juice
Contributes fruity sweetness and acidity to the blended flavour.
Orange juice
Contributes citrus aroma and sweetness to the blended flavour.
Carbonated water
Adds fizz and a light, lively texture to the finished punch.

The step that matters

Add the carbonated water last, just before serving. Carbon dioxide escapes more quickly from warm liquids and when stirred vigorously, so adding fizzy water early leaves the punch flat. Chilling first keeps the bubbles lively.
