Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Fat that cooks with the flour to form a base for the sauce.
Flour
Thickens the butter and melted cheese into a smooth, stable sauce.
Cheese
Melts into the sauce to give it body, richness, and savory flavor.
Oysters
Provide the main seafood flavor and tender texture in the finished dish.

The step that matters

Melt the cheese gently into the sauce. High heat can make cheese turn stringy or grainy and separate from its fat. Melting it slowly over moderate heat keeps the sauce smooth and creamy before the oysters are added.
