What each ingredient does

Dates
Provide the sweet, soft pulp that forms the base of the fluff.
Sugar
Adds sweetness and balances the tartness of the cooked dates.
Eggs
Yolks thicken the date mixture when cooked, and whites are folded in to make it light and airy.

The step that matters

Cook the yolk mixture for 3 minutes while stirring constantly. Egg yolk proteins thicken as they heat, but if the mixture overheats or stops being stirred, the yolks can scramble and turn grainy. Constant stirring spreads the heat evenly so the mixture becomes smooth and thick.

Swap the dates

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Datesthe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
