What each ingredient does

Gelatine
Sets the juice and cream into a firm, sliceable structure as it cools.
Whipped cream
Adds richness and a light, airy texture to the set mixture.
Orange juice
Provides the main fruit flavour and liquid for the set base.
Lady fingers
Form the molded edge and give the charlotte its sponge structure.

The step that matters

Fold in the whipped cream while partly set. If the gelatine is too liquid, the cream will deflate and separate; if it has set fully, the cream will not blend evenly. Timing gives a smooth, stable mousse-like texture.
