Why it works: Pepper and parsley match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Fillet of Whitefish

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Scale and split the fish into fillets.

  2. Season the fillets with salt and pepper.

  3. Dip each fillet in beaten egg, then in bread crumbs, and again in beaten egg.

  4. Grease the bottom of a baking dish with lard.

Bake and serve

  1. Lay the fillets in the dish and bake at 400°F (200°C) for 20 minutes.

  2. Remove excess grease and serve with fresh parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whitefish
Forms the main body of the dish, cooking into flaky, tender fillets.
Egg
Binds the bread crumb coating to the fish so it stays on during baking.
Bread crumbs
Form a crisp, golden coating that browns in the oven.

The step that matters

Dipping the fillets in egg and bread crumbs. The egg acts as glue for the crumb coating. If the fillets are wet or the coating is loose, the crumbs can fall off or stay pale and soggy in the oven.
