Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the custard as they set with heat, giving the pudding body.
Cream
Adds richness and fat, giving a smoother, creamier frozen texture.
Sugar
Sweetens the pudding and lowers the freezing point, keeping it softer when frozen.
Candied cherries
Add chewy texture and concentrated fruit sweetness throughout the pudding.
Milk
Forms the liquid base of the custard that thickens with the eggs.

The step that matters

Cook the custard until it just begins to thicken. Eggs set with heat, so undercooking leaves the custard thin, while overheating can curdle it. Stopping at the first thickening keeps it smooth before cooling and freezing.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, rum, egg, flour, milk, cream):

  1. Vanillafits better
  2. Raisinfits better
  3. Bananafits about as well
  4. Pineapplethe original

Fit is the average pairing score against sugar, rum, egg, flour, milk, cream. Candidates are from the same food group and used in at least 100 recipes.
