Breaded Pork Chops

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut flank and tenderloin from the bone and skewer into a round shape.

  2. Arrange the pork chops in a shallow baking pan with boiling water to half the depth of the chops.

  3. Sprinkle the chops with bread crumbs mixed with salt, pepper, and chopped onion.

  4. Cover the pan closely and bake in a slow oven at 300°F (150°C) for 1.5 hours.

  5. Remove the cover, place ½ teaspoon of butter on each chop, and bake until the crumbs are brown.
