What each ingredient does

Egg
Thickens the lemon mixture and adds richness as it sets with the cornstarch.
Cornstarch
Thickens the liquid into a smooth sauce when heated.
Lemon juice
Adds sharp acidity that brightens the sauce.

The step that matters

Adding the mixture to boiling water slowly while stirring constantly. Pouring the mixture in too quickly or without stirring can cause the egg to scramble and leave lumps, while constant stirring keeps the starch dispersed so it thickens evenly.
