Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Provide the main body and sweet, savory flavor of the soup.
Flour
Browns with the butter and onions and thickens the soup slightly.
Beef extract
Adds concentrated savory, meaty flavor to the broth.
Butter
Carries fat for sautéing the onions, adding richness and browning.

The step that matters

Cooking the flour until browned. Flour must brown in the butter and onion fat without burning; browning builds deeper flavor, and burnt starch tastes bitter before the liquid is added.
