Green Pea Souffle

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Mash the cooked peas while hot and season well with salt and pepper.

  2. Add the butter and milk to the mashed peas.

  3. In a separate bowl, beat the egg yolks and mix them into the pea mixture.

Fold and bake

  1. In another bowl, beat the egg whites until stiff peaks form, then gently fold them into the pea mixture.

  2. Pour the mixture into a buttered baking dish and bake at 400°F (200°C) for 20 minutes.

  3. Serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, and yolks enrich the custard-like base for structure.
Milk
Adds moisture and liquid that the eggs set into a tender, creamy texture.
Cooked peas
Provide the main body, flavor and green color of the soufflé base.
Butter
Adds richness and fat, giving a smoother mouthfeel and flavor.

The step that matters

Fold the beaten egg whites gently. Egg white foam holds the air that makes a soufflé rise. Stirring or deflating it vigorously knocks out air bubbles, so the soufflé bakes up flat and dense instead of light.

Swap the peas

How well each one fits the dish's main ingredients (butter, pepper, milk, egg):

  1. Walnutfits about as well
  2. Cocoafits about as well
  3. Peasthe original
  4. Almondfits about as well

Fit is the average pairing score against butter, pepper, milk, egg. Candidates are from the same food group and used in at least 100 recipes.
