Poached Eggs on Toast

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Toast the bread slices in a 350°F (175°C) oven until golden brown.

  2. Dip the hot toast into boiling water for a few seconds, then remove quickly.

  3. Place the toast on a large platter.

  4. Top each slice with one poached egg.

  5. Garnish with parsley or cress and serve hot.
