Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled eggs
Provide the main body of the dish, with whites chopped and yolks sieved for layering.
Milk
Forms the liquid base of the creamy sauce that moistens the bread and eggs.
Cornstarch
Thickens the boiling milk into a smooth sauce as its starch swells with heat.
Toasted salt-rising bread
Acts as the base layer that soaks up the milk mixture and holds the egg layers.

The step that matters

Adding the cornstarch mixture to the boiling milk. Cornstarch must be stirred into the hot milk and kept moving so it thickens smoothly; if it is added to cold liquid or left unstirred, it can clump or stay thin.

Swap the lettuce

How well each one fits the dish's main ingredients (egg, milk, olive, pepper, bread, parsley):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits better
  4. Lettucethe original

Fit is the average pairing score against egg, milk, olive, pepper, bread, parsley. Candidates are from the same food group and used in at least 100 recipes.
