Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole-wheat flour
Provides the structure that holds the fritters together.
Egg yolks
Add richness and help bind the batter.
Egg whites
Whipped to stiff peaks, they lighten the batter and help it rise.
Apples
Add moisture and sweetness to the batter.
Milk
Hydrates the flour and makes a smooth, pourable batter.

The step that matters

Folding in the beaten egg whites. Stiff whites hold air that gives the fritters lightness. Folding gently keeps that air in, while vigorous stirring would deflate the batter and make the fritters dense.

Swap the apple

How well each one fits the dish's main ingredients (wheat, flour, egg, milk, olive):

  1. Vanillafits better
  2. Avocadofits better
  3. Figfits better
  4. Applethe original

Fit is the average pairing score against wheat, flour, egg, milk, olive. Candidates are from the same food group and used in at least 100 recipes.
