Ingredients

Directions

Prepare the eggs and milk

  1. Remove the shells from the hard-boiled eggs, chop the whites finely, and rub the yolks through a sieve without mixing them.

  2. Boil 1 cup of milk in a saucepan.

  3. In a small bowl, mix 1 tablespoon of cornstarch with 1 tablespoon of olive oil, then add it to the boiling milk.

  4. Stir in the chopped egg whites, a little coarse sea salt, and a dash of cayenne pepper.

Assemble and serve

  1. On a platter, arrange 6 squares of toasted salt-rising bread and pour the mixture over the toast in a thin layer.

  2. Add a layer of the prepared yolks, followed by the remaining chopped whites, and finish with the rest of the yolks.

  3. Serve on lettuce leaves, garnished with parsley.

What each ingredient does

Hard-boiled eggs
Provide the main body of the topping, with whites adding texture and yolks adding richness.
Milk
Forms the moist, creamy base that the mixture is built on.
Cornstarch
Thickens the hot milk so the mixture holds its body on the toast.
Olive oil
Adds fat that smooths the thickened sauce and carries flavor.
Salt-rising bread
Acts as the sturdy base that soaks up the creamy mixture.

The step that matters

Adding the cornstarch mixture to the boiling milk. Cornstarch must be whisked into the hot liquid so it disperses evenly; if it is added to a cold or unstirred mixture it clumps, and the sauce will not thicken smoothly.

Swap the lettuce

How well each one fits the dish's main ingredients (egg, milk, olive, pepper, bread, parsley):
