Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whole-wheat flour
Provides the main structure of the batter.
Egg yolks
Add richness and help the batter hold together.
Egg whites
Beaten and folded in to lighten the batter and help it rise.
Milk
Adds moisture and loosens the batter.
Apples
Add moisture, sweetness, and flavour to the batter.

The step that matters

Drop spoonfuls into hot oil. If the oil is not hot enough, the batter absorbs it and becomes greasy; if too hot, the outside browns before the centre cooks through. Steady, moderate heat gives a crisp, evenly cooked fritter.

Swap the apple

How well each one fits the dish's main ingredients (wheat, flour, egg, milk, olive):

  1. Vanillafits better
  2. Avocadofits better
  3. Figfits better
  4. Applethe original

Fit is the average pairing score against wheat, flour, egg, milk, olive. Candidates are from the same food group and used in at least 100 recipes.
