Queen Custard

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the custard

  1. Mix the milk, egg yolks, almond meal, sugar, cracker crumbs, grated peel, and salt in a bowl.

  2. Pour the mixture into a granite dish and place it in a steam cooker for 1 hour.

Top and bake

  1. Beat the egg whites with powdered sugar until stiff peaks form.

  2. Spread the meringue over the custard.

  3. Place the dish in a 400°F (200°C) oven until the meringue is crisp.

  4. Remove from the oven and let it cool before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard and enrich it with fat and richness as it sets.
Egg whites
Whip into a foam that forms the meringue topping and browns in the oven.
Cracker crumbs
Add body and help thicken the custard base.
Milk
Forms the liquid base that the eggs set into a custard.
Sugar
Sweetens the custard and helps the meringue stay stable and crisp.

The step that matters

Steaming the custard gently. Egg proteins set at moderate heat; too much heat or too long a steam can make the custard curdle, weep, or turn grainy and watery.

Swap the orange

How well each one fits the dish's main ingredients (milk, egg, almond, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Orangethe original

Fit is the average pairing score against milk, egg, almond, sugar. Candidates are from the same food group and used in at least 100 recipes.
