Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sliced onions
Soften and brown to build the sweet, savoury base of the curry.
Curry powder
Supplies the main spice flavour and aroma as it is fried in fat.
Kidney beans
Provide the bulk, body and protein of the dish.
Strained tomatoes
Add acidity and liquid that thickens into the sauce as it simmers.
Seeded raisins
Add sweetness that balances the spices and acidity.

The step that matters

Simmer slowly for 2 hours. A gentle, slow boil lets the sauce reduce and the flavours meld while the beans soften evenly. Boiling too hard can break down the beans and scorch the sauce on the bottom of the pan.

Swap the raisin

How well each one fits the dish's main ingredients (onion, butter, kidney beans, tomato, rice):

  1. Avocadofits better
  2. Coconutfits better
  3. Cherryfits better
  4. Raisinthe original

Fit is the average pairing score against onion, butter, kidney beans, tomato, rice. Candidates are from the same food group and used in at least 100 recipes.
