Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salsify
Provides the main body and mild, distinctive flavor of the salad.
Coarse sea salt
Draws water out of the salsify slices, then is rinsed away to mellow the flavor.
Cabbage or lettuce
Forms the crisp, leafy base that holds the other layers.
Bleached celery
Adds crunch and a mild, fresh sharpness between the greens and salsify.
Decimayon-naise
Adds creamy moisture and richness that coats the layered vegetables.

The step that matters

Rinsing after salting. Salting draws out water and flavor from the salsify, and rinsing removes the excess salt. Rinsing too little leaves the salad harshly salty, while rinsing too long can wash away flavor.

Swap the cabbage

How well each one fits the dish's main ingredients (oyster, celery, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Mustardfits better
  4. Cabbagethe original

Fit is the average pairing score against oyster, celery, pepper. Candidates are from the same food group and used in at least 100 recipes.
