Fish Larded and Baked

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Lard the fish with strips of lard or bacon.

  2. Bake the larded fish in a preheated oven at 350°F (175°C) until cooked through.

  3. Garnish with mushrooms, turned vegetables, and parsley.

  4. To serve, cut across the lower edge of the larded portion and then down the back.

  5. Serve the larded portion with some vegetable garnish and a bowl of sauce on the side.
